Spicy Rigatoni alla Leftover Vodka

Preparation

  1. Heat a HexClad 12” Hybrid Fry Pan over medium heat, add butter, onion and garlic and cook, stirring occasionally, until softened and fragrant, about 5 minutes.
  2. Turn up heat to medium-high. Pour in vodka and boil until mostly evaporated, 1 to 2 minutes.
  3. Stir in tomato paste and cook, stirring, until lightly toasted, about 1 minute.
  4. Stir in pasta, 5 ¼ cups water, pepper flakes and 1 teaspoon salt. Bring to a boil, then reduce heat to medium and simmer, stirring frequently, until pasta is al dente and liquid is thickened, about 14 to 16 minutes. 
  5. Stir in cream and Parmesan. Season to taste with more salt and serve topped with more parm, more red pepper flakes and basil, if using
