Spicy Rigatoni alla Leftover Vodka

- Heat a HexClad 12” Hybrid Fry Pan over medium heat, add butter, onion and garlic and cook, stirring occasionally, until softened and fragrant, about 5 minutes.
- Turn up heat to medium-high. Pour in vodka and boil until mostly evaporated, 1 to 2 minutes.
- Stir in tomato paste and cook, stirring, until lightly toasted, about 1 minute.
- Stir in pasta, 5 ¼ cups water, pepper flakes and 1 teaspoon salt. Bring to a boil, then reduce heat to medium and simmer, stirring frequently, until pasta is al dente and liquid is thickened, about 14 to 16 minutes.
- Stir in cream and Parmesan. Season to taste with more salt and serve topped with more parm, more red pepper flakes and basil, if using
