12 Recipes That Make the Most of Late-Summer Produce

As of September 22nd, summer is over. (We’re not crying, you are!)

But there’s still plenty of time to revel in peak produce. In fact, some of the season’s greatest hits hit their stride in late August and early September. We’re talking eggplant, corn, zucchini, peaches—all the good stuff that’s practically throwing itself at your market tote. Toss it into crisp salads, quick stir-fries, creamy pastas perfect for back-to-school nights or a pizza that stretches that vacation feeling just a little longer. These 12 recipes are here to ease the transition to fall.

1. Grilled Summer Peaches

Once you’ve had your fill of peaches eaten over the sink, this clever dessert steps in. Oil and sugar the halves, then grill in your Hybrid BBQ Grill Pan until caramelized and tender. Served with Greek yogurt and a rosé syrup, it’s an elegant crowdpleaser and the ideal end to any end-of-summer dinner party.

2. Grilled Little Gem Salad with Calabrian Chile Caesar

Repeat after us: grilled Caesar is the best Caesar. After charring little gem halves in your Hybrid BBQ Grill Pan, you’ll toss them with a spicy riff on the classic dressing made with Calabrian chiles. Add homemade croutons to the mix and you’ve got an ideal side for August and September dinner parties.

3. Roasted Miso & Gochujang Eggplant

If you’re in tomato fatigue territory, consider this your off-ramp. Deep-fried eggplant gets coated in a spicy miso-gochujang glaze and then broils until glossy and caramelized. Perfect for those days when it’s too hot to grill and the kitchen AC is doing the heavy lifting.

4. Grilled Corn, Tomato, & Italian Sausage Pizza

Corn and tomatoes are late-summer MVPs, especially paired with sausage and a swipe of pesto on grilled pizza. Use the Hybrid Pizza Steel for a crisp, smoky crust. Homemade dough is great, but store-bought works just fine—more time for soaking up the sun.

5. Sugar Snap Pea, Corn, & Tomato Stir Fry with Ginger and Basil

A quick trip in the wok is just what the summer trio of snap peas, corn and tomato requested. Pile them over rice or serve alongside planks of grilled tofu for an easy dinner.

6. One Pot Ricotta Pasta with Corn, Lemon, & Basil

Kernels of corn bring a touch of sweetness to this one-pot pasta recipe, which finds new levels of creaminess, thanks to a winning combination of ricotta and Parmesan.

7. Sweet Chile & Ricotta Eggplant Toast

Here’s a recipe for late August perfection: grill planks of homemade sourdough, spoon ricotta overtop, add grilled eggplant and tomatoes and finish with a drizzle of sweet chile sauce.

8. Zucchini Carbonara With Herbed Ricotta

If creamy weeknight pasta is on the cards but you’ve got of zucchini crowding your crisper, make this easy veggie-friendly take on carbonara.

9. Peach Skillet Cobbler

Tuck those sugar-sweet peaches into an easy cobbler batter in your HexClad 10"/25 cm Hybrid Fry Pan and serve straight on the table with plenty of vanilla ice cream to go around.

10. Warm Grilled Zucchini, Feta, & Basil Salad

There are so many great things to do with zucchini, but this might be one of our faves: Toss coins of zucchini and summer squash in your Hybrid BBQ Grill Pan until caramelized and charred, then pair them with plenty of feta and a vinegary basil-caper-pistachio.

11. Tomato, Peach and Burrata Salad With Chile-Lime Vinaigrette

As they say, what grows together goes together. Here’s proof: tomatoes and peaches nestle alongside creamy burrata in this spicy take on Italian caprese salad.

12. Matchstick Okra Fries

Okra does best with extremes, and this crisped-up take on the summer staple proves it. Fry until golden in your 4.5QT/4.3 L Hybrid Deep Sauté Pan, then toss with a salty masala spice mix. Serve with a yogurt dip, if you like.

Even though the school year might be starting, your dinner plans can still taste like vacation.
