Warm Grilled Zucchini, Feta, & Basil Salad

Preparation

  1. Preheat grill with HexClad 12” Hybrid BBQ Grill Pan placed on the center of the grill over medium-high heat, 15 minutes.
  2. In a large bowl, toss zucchini with vegetable oil and season with salt and pepper. Working in four batches, add zucchini in an even layer (do not overcrowd) to the grill pan. Grill (covered if using a gas grill) until the bottom side of the zucchini is deeply golden, about 4 minutes. Turn the zucchini and continue to grill on the other side until tender, 1 to 2 minutes more. Transfer to a serving platter, repeat with remaining batches of zucchini.
  3. Meanwhile, place a HexClad 8” Hybrid Pan on the side of the grill and heat olive oil until warm. Add capers and cook, stirring occasionally, until light golden and crisp, about 2 minutes. Remove from the heat and stir in the basil, vinegar, honey, and garlic until the mixture stops sizzling. Stir in pistachio and season with salt and pepper to taste.
  4. Spoon warm dressing over grilled zucchini and top with feta.
