Crispy tacos filled with BBQ-spiced rotisserie chicken are a great way to make fancy and flavorful tacos without too much effort. The slight spice and tang from sliced pickled jalapenos adds the perfect contrast to the cheese and chicken. This recipe can be multiplied to feed more people, if desired.

  1. Heat a HexClad 2QT Hybrid Saucepan over medium heat. Add oil and garlic and cook, stirring, until fragrant, about 30 seconds. Add chili powder and cumin and cook, stirring, until just toasted, 30 seconds more.
  2. Add chicken, chopped pickled jalapenos and barbeque sauce. Season with salt and mix until chicken is incorporated and hot, about 2 minutes more. Remove from heat, stir in cilantro and keep the chicken mixture warm.
  3. Heat a HexClad 12” Hybrid Fry Pan over medium heat. Sprinkle about ⅓ cup cheese into a circle about the size of the tortillas in the center of the pan. Place 4 slices of pickled jalapeños on the cheese and top with a tortilla.
  4. Using a spatula, push the tortilla down into the cheese, add about ⅓ cup chicken mixture to the top half of the tortilla.
  5. Let the cheese crisp, 2 to 3 minutes. Using a thin spatula, fold the bottom of the taco over the top. Remove to a plate. Carefully wipe the pan clean and repeat process with remaining tortillas, jalapeños, cheese, and chicken mixture.
  6. Serve with more pickled jalapeños, if desired, more barbecue sauce, guacamole and lime wedges.
