Preparation

This recipe uses tomatillo salsa to flavor the rice and beans creating a perfectly tangy dish to serve with creamy avocado and melted cheese. With only a few ingredients this dish covers a ton of flavor. Serve with tortilla chips.

  1. Preheat the oven to broil with a rack in the upper third.
  2. Add the oil to the HexClad 12" Hybrid Fry Pan over medium heat. Add the rice and mix until coated and lightly toasted, about 2 minutes. Add 24 ounces (2 ¾ cup) of the tomatillo salsa and 1 ½ cups of water. 
  3. Bring to a boil, add the beans and season with salt and pepper. Turn the heat down to a simmer and cover the pan. Simmer until rice has absorbed all liquid and is cooked through, about 18 minutes. Turn off the heat and let sit, covered, for 10 minutes. 
  4. Remove the lid and sprinkle the top evenly with the cheese. Broil, uncovered, until the cheese is melted and golden in places, 1 to 2 minutes.
  5. Serve topped with the sliced avocado.
