Cheesy Salsa Rice and Bean Skillet

This recipe uses tomatillo salsa to flavor the rice and beans creating a perfectly tangy dish to serve with creamy avocado and melted cheese. With only a few ingredients this dish covers a ton of flavor. Serve with tortilla chips.
- Preheat the oven to broil with a rack in the upper third.
- Add the oil to the HexClad 12" Hybrid Fry Pan over medium heat. Add the rice and mix until coated and lightly toasted, about 2 minutes. Add 24 ounces (2 ¾ cup) of the tomatillo salsa and 1 ½ cups of water.
- Bring to a boil, add the beans and season with salt and pepper. Turn the heat down to a simmer and cover the pan. Simmer until rice has absorbed all liquid and is cooked through, about 18 minutes. Turn off the heat and let sit, covered, for 10 minutes.
- Remove the lid and sprinkle the top evenly with the cheese. Broil, uncovered, until the cheese is melted and golden in places, 1 to 2 minutes.
- Serve topped with the sliced avocado.
