Thanksgiving Leftover Fritters

This recipe utilizes all of the Thanksgiving classics in an easy way to enjoy leftovers and feed the family. Swap out the brussel sprouts for whatever veggie sides your family enjoys on Thanksgiving. The potato and stuffing crisps up to golden on the Hexclad Hybrid Double Burner Griddle while allowing to cook all of the patties at once.
- In a large bowl, mix the turkey, stuffing, mashed potatoes, brussel sprouts together. Add in the egg and flour, season with salt and pepper and mix.
- Form eight 3” patties, balling the mixture together and flattening it to about 1” thick.
- Heat 2 tablespoons of olive oil on the HexClad Hybrid Double Burner Griddle over medium heat.
- Place the patties on the griddle and cook for 2 minutes on each side, until golden.
- Garnish with chopped parsley and serve with cranberry sauce and/or gravy.
