Drunken Noodles with Shrimp

Make the sauce. Combine all of the sauce ingredients in a small bowl. Set aside.

Make the noodles. Heat vegetable oil in a HexClad 10"/25 cm Hybrid Wok or HexClad 12"/30 cm Hybrid Fry Pan over medium-high. Add shrimp and cook, tossing occasionally, until golden, about 1 minute. Remove shrimp to a plate.

Return the wok to a medium-high heat. Add the onion, ginger, garlic and chile and stir fry, tossing, for 1 minute. Add tomato and bok choy and continue to stir fry, tossing, for 2 minutes. Return shrimp to wok and add egg. Stir fry, scrambling the egg with the back of a spoon, 1 minute more.

Add noodles and sesame oil to wok and toss until the noodles are slightly charred and hot, about 2 minutes more. Pour in sauce and add basil. Toss to coat everything in sauce. Divide between bowls and squeeze with lime.
