Preparation

  1. Using tongs, lightly toast each tortilla directly on the gas burner, flipping occasionally, until charred in spots. Transfer to a clean kitchen towel to keep warm.
  2. Heat the HexClad 10" Hybrid Fry Pan over medium. Working one at a time, mound ½ cup portions of cheese onto the hot pan and gently spread to create a circle slightly larger than the tortillas. Let cheese cook until melted and edges start to crisp, about 1 minute. Place 1 charred tortilla on top of each mound of cheese and press with a spatula to adhere. Cook about 30 seconds. Flip the tortilla so that the cheese is facing up and immediately fold in half. Repeat with remaining cheese and tortillas. Serve immediately, with pico, sour cream and guacamole alongside.
