Then, add oil to your preferred pan (For single fillets, choose a small, 8-inch skillet; for 2 fillets, use a medium, 10-inch skillet; and for 4 fillets, go with a large, 12-inch skillet.) and heat until the oil shimmers. Now, add the fish skin-side down and cook until the skin is golden and crisp. (Resist the temptation to peek too often, which can affect the cooking.)
