Oven-Roasted Garlic and Herb Salmon

This Seattle-style roast salmon celebrates the region’s love for fresh seafood, bold favors, and simple, wholesome ingredients. A quick marinade in zesty herbs, garlic, and citrus elevates simple roast fish to the star of any special occasion meal or weeknight dinner.
- Combine oil, lemon juice, lime juice, garlic, cilantro, scallions, oregano, paprika, cumin, 1 tablespoon salt and ½ teaspoon black pepper in a large ziptop bag or large baking dish. Add the salmon, seal the bag and gently massage the ingredients into the salmon until fully coated. If using a baking dish cover. - Preheat the oven to 400°F/200°C. Remove the salmon from the marinade and place, skin side down, in the bottom of a HexClad Large Hybrid Roasting Pan (do not use the rack). Pour any remaining ingredients in the bag over the top of the salmon.
- Bake salmon, uncovered, until medium rare or the internal temperature reaches about 125°F/50°C, about 25 minutes. Serve topped with more cilantro with lemon rounds.
