This fast food-inspired egg sandwich gets an upgrade with tender double egg patties, extra cheese, and crispy Canadian bacon—all cooked on our double burner griddle. For a fresh bite, try pickled banana peppers or baby arugula piled on top. While you can mix up your eggs directly in the molds, we like to give them a quick whisk first for a smoother texture.

In a small bowl, whisk mayonnaise with hot sauce and fish sauce.

Spread 2 tablespoons of softened butter on cut sides of English muffins. Set a HexClad Hybrid Double Burner Griddle over two burners and heat over medium. Cook English muffins cut side down, pressing gently, until golden brown and toasted, 4 to 5 minutes. Stack English muffins like a sandwich and move to back half of griddle. Reduce back burner to low.

Brush front half of griddle with remaining 1 teaspoon of butter. Cook Canadian bacon, turning once, until beginning to brown and slightly crispy around edges, 1 to 2 minutes per side. Slide 1 piece of Canadian bacon between each English muffin sandwich and keep warm.

Arrange 4 HexClad Egg Ring Molds on front half of griddle and generously grease with cooking spray. Crack two eggs into each egg ring mold and season with salt. Cook over medium heat, until whites are cooked through and yolks are almost set, 6 to 8 minutes. Using an offset spatula or butter knife, gently loosen eggs from side of ring and unmold. Using a spatula, gently flip egg patties and top each one with 2 slices of cheese. Cook until cheese is just melted, about 30 seconds.

Transfer English muffins to 4 plates or a platter. Spread bottom halves of muffins with spicy mayo, then top each breakfast sandwich with Canadian bacon, an egg patty, and pickled peppers. Close sandwiches and serve hot.
MAKE AHEAD Sandwiches can be wrapped in foil and refrigerated for up to 1 day. Remove from foil and microwave on HIGH in 30 second intervals until heated through. If desired, use egg ring to cut rounds of cheese to avoid melting onto foil.
