Juicy pears and tart cranberries baked under a buttery oat topping make this an easy, comforting dessert that works just as well for a weeknight treat as it does on a holiday table. The contrast of sweet fruit and tart berries under a golden, crisp topping is especially satisfying when baked in the HexClad Hybrid Oval Roasting Pan, which ensures even cooking and makes a beautiful presentation straight from oven to table.

  1. Make filling. Preheat oven to 425ºF/220ºC. Butter a HexClad 9” Hybrid Oval Roasting Pan and set on a foil-lined baking sheet. In a large bowl, toss pears, cranberries, granulated sugar, cornstarch, vanilla, cinnamon, cardamom and salt until evenly coated. Spread mixture evenly in prepared dish.

  2. Make crumble. Wipe out bowl with a paper towel. Whisk together flour, oats, brown sugar, cinnamon and salt. Add butter. Using fingertips, massage butter into mixture until it forms pea-sized clumps.

  3. Assemble and bake. Sprinkle crumble evenly over fruit. Bake until filling is bubbling and top is golden, 32 to 36 minutes. Let cool 10 minutes before serving.

MAKE AHEAD TIP

Crumble topping can be prepared up to 1 day in advance. Store in an airtight container in the refrigerator. Assemble just before baking.
