8 Dinners To Make In Your Small Roasting Pan

8 Dinners To Make In Your Small Roasting Pan

by HexClad Cookware

Bourbon-Glazed Smoky Bacon-Wrapped Pork Tenderloin

Did you know that the Small Hybrid Roasting Pan isn’t just for roast chicken (although it’s perfect for that, which is why we’ve included three versions below)? Snag this versatile pan for easy meals for two, big family favorites and everything in-between. Think: bacon-wrapped pork tenderloin, saucy enchiladas or a British-style Sunday roast, all served straight from the pan. It holds heat like a pro, cleans up easily and looks good doing it.

Whether you’re cooking up a bubbling lasagna or traditional German roulades, this pan proves you don’t need a special occasion to serve something special.

1. Piri-Piri Spiced Roast Chicken With Potatoes

Try this DIY take on the roast chicken popular at Portuguese rotisseries for your next dinner party. The marinade includes both red and green chiles, as well as smoked paprika for earthy notes. (If you’re heat-averse, take note, and maybe switch to one of our other delicious roast chicken recipes.) After marinating the chicken, ideally overnight, you’ll roast it on top of sliced Yukon Gold potatoes so the potatoes can soak up all the drippings and spicy sauce.

2. Bourbon-Glazed, Smoky, Bacon-Wrapped Pork Tenderloin

This isn’t your average weeknight tenderloin: A pork tenderloin is ensconced in bacon,  then seared until crisp and roasted over Brussels sprouts and sweet potatoes. The mustardy bourbon glaze lends sweet, smoky flavor to every slice, turning an everyday dinner into something worth setting the table for.

3. Roasted Lemon Chicken with Sweet Potato & Arugula-Fennel Salad

Just because you’re using a larger pan doesn’t mean you have to cook for a crowd. This pared-down roast dinner is ideal for two, with lemony spiced chicken nestled alongside sweet potatoes that soften and caramelize as they roast. A crisp salad of arugula, shaved fennel, cucumber and avocado adds brightness and bite.

4. German Beef Roulades

This German favorite is a must when temperatures start to cool down. Thin slices of beef coddle a mustardy mixture of bacon, onions and pickles, and then are seared and oven-braised in your Small Hybrid Roasting Pan until tender. Finally, the rich sauce is finished with cold butter for a glossy, restaurant-style finish. Serve it with spiced red cabbage and buttered spätzle or mashed potatoes. (If you can’t find pre-cut roulade steaks, ask your butcher to slice a top round roast for you.)

5. Vegan Lasagna

A layered tribute to the Italian classic, this plant-based, dairy-free lasagna stars a deeply savory mushroom ragù and a creamy béchamel that just happens to be vegan. Once assembled, the whole thing bakes up with a bubbly, golden crust that begs to be served straight from the pan for a laid-back fall or winter dinner party.

6. British Sunday Roast

If you’ve ever been in the UK on a Sunday, you know the roast isn’t just a meal, it’s a ritual. Ours keeps the essentials—juicy meat, crisp potatoes, sweet carrots and one giant Yorkshire pudding—so you can bring the tradition home no matter where you are. Roast the meat and veg together in your Small Hybrid Roasting Pan, then bake the pudding in a 12"/30 cm Hybrid Fry Pan for maximum rise and effortless cleanup.

7. HexClad Perfect Roast Chicken With Pine Nut & Currant Salad

We don’t throw around the word “perfect,” but this chicken earns the title. The method guarantees burnished skin that crackles with every bite, as well as potatoes that practically steal the show. A side salad topped with a pine nut, currant and herb vinaigrette adds acidity and balance. It’s a roast dinner with serious range, setting the bar for every bird that comes after.

8. Enchiladas Divorciadas Recipe

No, this dish isn’t about marital drama. “Divorciadas” refers to the duo of red and green sauces that top these chicken-and-cheese enchiladas. They’re assembled and baked in your Small Hybrid Roasting Pan, and can be dished out right on the table alongside rice and beans. Bonus points if you make homemade corn tortillas; the flavor and texture payoff is well-worth the work.

The point is: This pan is the kind that earns its regular spot on the stovetop, not in the cabinet.
