This dirty-ish rice gets its signature depth from the Creole and Cajun holy trinityโonion, bell pepper, and celeryโcreating a rich, aromatic base. Serve it alongside blackened fish, roast chicken, or smothered pork chops, or enjoy it on its own with a drizzle of hot sauce.
- In a HexClad 3QT/3 L Hybrid Saucepan over medium heat, warm olive oil; add the onion, bell pepper, celery, and garlic and cook, stirring occasionally, until softened, 8 to 10 minutes. Stir in tomato paste, thyme, Cajun seasoning, and bay leaf. Cook until fragrant, 1 to 2 minutes.
- Add the beans, rice, and lemon juice to the pot; stir to combine. Cook, stirring occasionally, until the rice and beans are heated through, 3 to 5 minutes. Remove bay leaf before serving. Season with salt and pepper.
