Loaded Potato Soup

Ingredients

  • 1lb. of bacon or you can substitute bacon for cubed ham, if desired.
  • 1/4 cup scallions
  • 1/4 cup garlic
  • 1/2 cup flour
  • 16oz heavy cream
  • 1 cup whole milk
  • 2 cups chicken broth
  • 3 pound of Russet, Idaho or Yukon gold potatoes. 
  • 2 garlic cloves, minced
  • Half med. onion, finely chopped
  • 2 cups of cheddar cheese 

Steps

1. Place chopped potatoes in a pot, cover with water, season with salt and cook until tender then drain.

2. In a separate pot, sauté bacon until crispy, remove and set aside, reserving some bacon grease in the pot.

3. Add and sauté onions. Then pour in chicken broth and sauté until soft. Add garlic, cooking until fragrant.

4. Whisk in flour, milk, and cream until smooth. Add drained potatoes, season with salt and pepper and bring to a soft boil.

5. Stir in sour cream, cheese and bacon.
