Fall Hash

1) Chop vegetables of your choice, drizzle olive oil, sprinkle salt, pepper & garlic with fresh thyme. For the thyme - Just a couple sprigs on the baking sheet.
2) Roast in oven at 425° for 20-30 minutes.
3) Oil pan and sauté red onion, garlic, and carnitas. Once cooked add in roasted vegetables and two handfuls of kale.
4) Drizzle with balsamic glaze.
