Caramelized Onion Butter

Ingredients
- 2 each red onions rough chopped
- 2 each white onions rough chopped
- 3 cloves garlic, sliced
- 2 tbsp extra virgin olive oil
- 3 tbsp butter, room temperature
- salt and pepper to taste
Instructions
- Toss together the onions, garlic and oil and transfer to a greased baking sheet
- Roast the onions at 375 degrees for 20 minutes, or until well caramelized.
- Puree the onions in the food processor until smooth. Add in the room temperature butter and season with salt and pepper, and pulse in the food processor again. Keep in the refrigerator for up to a week.
